Kajian Sistematis Formulasi Teh Herbal Berbasis Bunga Telang, Jahe, dan Sereh sebagai Minuman Fungsional

Penelitian ini bertujuan untuk mengkaji secara sistematis potensi formulasi teh herbal berbasis bunga telang (Clitoria ternatea), jahe (Zingiber officinale), dan sereh (Cymbopogon citratus) sebagai minuman fungsional. Metode yang digunakan adalah Systematic Literature Review (SLR) dengan pendekatan PRISMA 2020 melalui tahapan identifikasi, screening, eligibility, dan inklusi terhadap artikel yang relevan dari berbagai basis data ilmiah. Hasil kajian menunjukkan bahwa ketiga bahan tersebut mengandung senyawa bioaktif utama seperti antosianin, flavonoid, polifenol, dan minyak atsiri yang berkontribusi terhadap aktivitas antioksidan, antiinflamasi, dan antimikroba. Bunga telang berperan dominan dalam memberikan warna alami dan aktivitas antioksidan, jahe berkontribusi terhadap aktivitas antioksidan dan sensasi hangat, sedangkan sereh memberikan aroma khas serta efek antimikroba. Kombinasi ketiga bahan menunjukkan potensi sinergis dalam meningkatkan kualitas fungsional dan karakteristik sensorik minuman herbal. Namun demikian, penelitian sebelumnya masih terbatas pada penggunaan bahan tunggal atau kombinasi parsial. Oleh karena itu, diperlukan penelitian lanjutan yang lebih komprehensif untuk mengoptimalkan formulasi serta menguji efektivitasnya secara empiris.
